Juicing Up


With my very strange obsessive type behaviors, I have decided to focus on fitness. I am sure we have all made some sort of a commitment, at least 200 times in our lives to be more fit. This time, I really have nothing stopping me.

My work schedule is light and pretty flexible (as in my 6 hour days are not too rough). I have no extra added responsibilities. I have been going to hot yoga very regularly recently. I added in running on the track (yes running, unbelievable)

And now…with all of our amazing trips to the market and so many veggies and fruit to go through, I am juicing.

A few weeks ago I came across a juice recipe on The Imperfect Diet.

A friend here in Korea said she had an extra juicer laying around her apartment and said she would mail it across the country to me. (when checking the postage it was only $5, this country continues to surprise me in so many ways). I got a call from the postman…he was rambling in Korean, so I handed my phone to one of my students and they told me the box was waiting in our apartment lobby for me.

When I got home, I was utterly shocked. Kristi had mailed me a real, no joke, heavy duty juicer…brand new. Definitely not what I was expecting.

I opened it up right away and went to work on a juice with whatever I had in the house. Who knew a cucumber, some ginger, a green apple and lettuce would turn out so neon! It tasted fabulous and now, one of my snacks each day has been replaced with a yummy concoction.

And for those of you who want a juicer, I highly recommend this one..it is super easy to clean!

  1. I miss my juicer! It is one of the few things we kept back home. A year ago we made a 10 day juice detox after seeing the movie Fat, sick and nearly dead This is the main recipe:
    Kale Leaves
    1 Cucumber
    4 Celery Stalks
    2 Green Apples
    1/2 Lemon
    1 piece of ginger
