I have made approximately 200 fitness commitments in my lifetime… and this time in Korea with hot yoga running and a juicer that arrived by post for five dollars I think it might actually be sticking.
With my very strange obsessive type behaviors, I have decided to focus on fitness. I am sure we have all made some sort of a commitment, at least 200 times in our lives to be more fit. This time, I really have nothing stopping me.
My work schedule is light and pretty flexible (as in my 6 hour days are not too rough). I have no extra added responsibilities. I have been going to hot yoga very regularly recently. I added in running on the track (yes running, unbelievable)
And now…with all of our amazing trips to the market and so many veggies and fruit to go through, I am juicing.
A few weeks ago I came across a juice recipe on The Imperfect Diet.
A friend here in Korea said she had an extra juicer laying around her apartment and said she would mail it across the country to me. (when checking the postage it was only $5, this country continues to surprise me in so many ways). I got a call from the postman…he was rambling in Korean, so I handed my phone to one of my students and they told me the box was waiting in our apartment lobby for me.
When I got home, I was utterly shocked. Kristi had mailed me a real, no joke, heavy duty juicer…brand new. Definitely not what I was expecting.
I opened it up right away and went to work on a juice with whatever I had in the house. Who knew a cucumber, some ginger, a green apple and lettuce would turn out so neon! It tasted fabulous and now, one of my snacks each day has been replaced with a yummy concoction.
And for those of you who want a juicer, I highly recommend this one..it is super easy to clean!
Do you have any great juicing recipes, please share!

Juice good enough for the hulk
Q: What is a good beginner juice recipe to start with? A: Our first juice was made from whatever was in the house… cucumber… ginger… green apple… and lettuce. The result was so neon green it looked radioactive and tasted absolutely fantastic. If you are new to juicing start with something apple based to keep it sweet and approachable then slowly add more greens as your taste buds adjust.
Q: What are the benefits of juicing daily? A: Fresh juice delivers concentrated vitamins and minerals directly into your system without the fiber slowing absorption down. For us it replaced one daily snack completely and provided a genuine energy boost that felt noticeably different from coffee. The Korean market made it easy and affordable with an extraordinary variety of fresh produce available year round at very reasonable prices.
Q: What juicer do you recommend for beginners? A: Honestly the best juicer is the one you actually have access to. Ours arrived unexpectedly by post from a friend in Korea for a five dollar shipping fee and turned out to be a heavy duty brand new machine that we would never have splurged on ourselves. Look for something easy to clean… that is the single most important factor in whether you will actually use it consistently.
Q: Is fresh produce affordable in South Korea for juicing? A: At the local markets absolutely yes. The variety of vegetables and fruit available at Korean market stalls is extraordinary and significantly more affordable than buying from large grocery chains like Emart. Shopping at local markets also means fresher produce with more nutrients and the bonus of building relationships with the vendors who will eventually start throwing in extras for free.
Q: How do you stay motivated with a new fitness routine while living abroad? A: Remove every possible obstacle between you and the habit. A friend mailed me a juicer. The market is steps away. Hot yoga is across the street from work. Running is on the track outside our window. When the friction disappears the habit appears. Living abroad with a lighter schedule and fewer obligations made it genuinely easier to prioritize fitness than it ever was back home.

Kale Leaves
1 Cucumber
4 Celery Stalks
