Ask ten people what San Diego’s signature food is and half will say the California burrito. I would argue for the fish taco instead, and here is why.
The fish taco did not start in San Diego, it came up from Baja California, but San Diego is where it crossed the border and became a full blown local identity. Rubio’s opened its first location in Mission Bay in 1983, built entirely around a recipe the founder’s father brought back from a fishing trip to Baja, battered white fish, cabbage, a creamy white sauce, a squeeze of lime, wrapped in a corn tortilla. That one shop is a big part of why fish tacos spread across the entire country the way they did.

Why it matters more than the burrito, to me, is what it says about the place. A California burrito is a late night, deep fried, carne asada and french fry situation, and it is delicious, but it could exist almost anywhere with a taco shop and a griddle. A fish taco only makes sense in a city built around the Pacific, with a fishing fleet a few miles offshore and a border an hour south that shaped how people here actually eat. It is a coastal food in a coastal city, and that is the whole point of it.
For a family trip, fish tacos are also just an easy meal. Cheap, usually two to four dollars a taco at a real taco shop, fast, and mild enough that most kids will eat the fried version even if they turn their nose up at anything with real spice. Order a few plain, a few with the works, and let everyone build their own plate.
Skip the sit down restaurant version if you can. The best fish tacos in San Diego are still at small taco shops, not at places with a hostess stand, and that is true almost everywhere fish tacos are done well. Ask a local where they actually eat lunch, not where the tourist lists point you, and you will end up somewhere better and cheaper than the guidebook favorite.
