Amsterdam is compact, orderly, and easy with kids, and it makes a great base for some classic Dutch day trips.
For food, the kid wins come fast. Dutch pancakes, thinner than American ones and served with sweet or savory toppings, are a whole meal and there are pancake restaurants made for families. Stroopwafels, two thin waffles with caramel in the middle, are the street snack to get warm off a stand. Fries, here served with mayonnaise, and mild cheese round it out. Picky eaters thrive.
Getting around, the trams are easy and the center is walkable, though you must always watch for bikes, which come fast and have the right of way. Look both ways twice.
For a day trip, Zaanse Schans is a short train ride and it is the postcard Holland kids picture, working windmills you can go inside, wooden shoe demonstrations, and cheese making. It is touristy but charming and a hit with younger kids. In spring, the tulip fields and Keukenhof gardens are a short trip out and worth timing a visit around.
Two to three days in the city is right, more if you add day trips.
